I am looking for some software that is like Doodle.com but self hosted. Would prefer a PHP app that can be quickly installed and deployed.

You could try RdvZ (n.b., originally a French-language tool, but it looks like U.S. English is also an option):
http://github.com/UAPV/RdvZI know of a few other PHP-based scheduling tools, but they lack the polling functionality of Doodle and its ilk. We're bound by MS Exchange over here, so I haven't tried RdvZ out myself!
