Can you talk more about the potential uses of that video?

It depends on several things. First, as Julie notes, what you plan to do with the video; second, what type of media you are saving to (e.g., hard drive, dvd, etc); third, what type of software you will most likely use if you go back to that video; and fourth, what type of media you use for shooting (e.g., DV tape, memory card, miniDVD, etc.)
Personally, I still prefer to shoot and store my video on DV Tape. All digital formats are tremendous memory hogs and it's very easy to fill up terabyte drives with video footage you may or may not go back to. If you use a program such as FinalCut Pro, you can mark and tag your video on the tape and go back to your marks fairly easily during the editing process as well.
